Quality You Can Trust
Safety and quality are at the heart of what we do. To ensure our wing sauce is shelf-stable and safe, we use a meticulous process: To make and bottle a shelf-stable wing sauce, we heat it to at least 180°F (82°C) and hold it there for a minimum of 10 minutes to kill harmful bacteria and create a safe product. This process, known as pasteurization, is crucial for preventing foodborne illnesses, such as botulism.
Our Bottling Process
To ensure our wing sauce is shelf-stable and safe, we use a meticulous process: Our Hot-fill method for bottling wing sauce: 1.We start with the right acidity: For sauce to be considered shelf-stable without a pressure canner, its pH must be 4.0 or lower. We use a pH meter to verify the acidity level. Vinegar is the most common ingredient used to lower the pH. 2.We Sterilize our bottles: We wash our bottles and lids thoroughly. Sterilizing them by submerging them in boiling water for at least 5 minutes or by baking them in an oven. 3.We heat our sauce: In a large sterilized stock pot, we bring our finished wing sauce to a hard simmer, targeting a minimum temperature of 180°F (82°C). 4.We hold the temperature: We maintain the sauce at or above 180°F for at least 10 minutes, stirring constantly to ensure consistent heat distribution. 5.We bottle the hot sauce: While still above 180°F, the sauce is poured into sterilized bottles with ½ inch of headspace. 6.We seal and invert: We place the sterilized lids on the bottles and tighten the screw bands "fingertip-tight." Immediately, we turn the bottles upside down to sterilize the lids. 7.We cool and check the seal: After a few minutes, we turn the bottles right side up and allow them to cool completely. A "pop" indicates a vacuum seal has formed. We check that the lid is depressed and sealed before storing it in a cool, dark place for distribution.
